Octopus in red wine and honey sauce

Ingredients

  • 1 large octopus (1 kg) – cleaned fresh or frozen
  • 3-4 tbsp olive oil
  • 1 medium onion chopped
  • 1 clove of garlic, crushed
  • Slices and zest of 1 orange
  • 2 bay leaves
  • 1 tbsp oregano
  • 1 tbsp dry thyme
  • 200ml dry red wine
  • 2 tbsp thyme honey
  • Freshly ground pepper

Cooking Method

1. Wash and drain the octopus well. Cut it into small pieces.

2. In a saucepan, heat the olive oil over medium heat and fry the onions and garlic until soft, stirring regularly.

3. Add the octopus, stir and when it turns brown, add the wine, orange slices, oregano, bay leaf, thyme and pepper.

4. Cover the pot with the lid, lower the heat and simmer the octopus for about 1.5 hours, to bind the water it will extract with the rest of the ingredients.

5. During the last 10 minutes, add honey and orange zest and mix.

6. Serve the octopus warm with rice or orzo.
