Red lentil pasta with healthy yogurt sauce.

  • 250 g pasta e.g., penne from red lentils
  • 1 red pepper cut into thin strips
  • 8 cherry tomatoes cut in half
  • 1 tbsp olive oil
  • Fresh basil leaves
  • 1 tsp of salt
For the yogurt sauce:
  • 1 small cup of yogurt e.g., strained 2%
  • 60 g grated feta
  • 1 tbsp olive oil
  • 1/2 tsp oregano
  • 1 tsp dill
  • Optional: 1 tsp lemon zest

Cooking Method

1. In a non-stick pan, heat the olive oil and sauté the peppers with the cherry tomatoes very lightly.
2. Boil the spaghetti in salted water according to the instructions on the package, stirring often.
3. Prepare the yogurt sauce: mix all the ingredients until well homogenized.
4. Serve the pasta, add the vegetables and mix well with the sauce.
5. Garnish with basil leaves.
