Stuffed Peppers with Quinoa and Tofu

Ingredients
- • 1¾ cups water
- • ¾ cup quinoa
- • 2 large peppers (red, yellow or orange)
- • 2 tbsp sesame oil
- • 100gr tofu, cut in cubes (smoked or fresh)
- • ¼ cup finely chopped parsley
- • 2 grated carrots
- • 1½ tsp reduced salt soy sauce or tamari sauce
- • 2 thinly chopped onions
- • 1 tsp grated fresh ginger
- Salt
- Pepper
Cooking Method
- Cut the peppers in half and cook in a preheated oven for 5 minutes, until tender.
- Boil the quinoa in water for 10 minutes, lower the flame, allowing it to absorb the juices.
- Sauté the tofu in sesame oil until brown, and add the carrots, soy sauce, parsley, onions, quinoa, ginger and lastly the salt and pepper.
- Fill the peppers with the quinoa-tofu mixture and cook in a preheated oven for 5-7 minutes.
