Vinification Details	This wine is made from the grapes of some selected vineyards in the heart of the production zone, in mixed clayey-limestone soils are particularly well-suited to the production of aromatic grapes. After a short period of cold maceration and soft pressing, the must is kept chilled until it ferments, at about 15°C, in pressurised tanks to gain its effervescence
